TWICE-BAKED SWEET POTATOES

As always, this recipe is extremely easy to make and so delicious. It’s also pretty healthy, which is a plus.

WHAT YOU NEED

  • Three medium to large sized sweet potatoes

  • 3-4 scoops of greek yogurt (or sour cream depending on how healthy you want to be)

  • Shredded cheddar cheese

  • Green onions

  • Salt and pepper to taste


HOW TO MAKE IT

  • Preheat oven to 400 degrees

  • Place sweet potatoes on baking sheet and bake for 1 hour or until soft

  • Once baked, cut sweet potatoes in half length-wise and scoop out the inside to place in a mixing bowl, reserving the skins

  • Mix the scooped out sweet potato, greek yogurt, handful of cheddar cheese, some green onions and salt/pepper in the bowl

  • Put the mixture back into the skins of the sweet potatoes

  • Top it with more cheddar cheese and bake for 15 more minutes

  • When the cheese has melted, take them out and top with greek yogurt, salt, and green onions

  • Serve and enjoy your healthy-ish meal
