As always, this recipe is extremely easy to make and so delicious. It’s also pretty healthy, which is a plus.
WHAT YOU NEED
Three medium to large sized sweet potatoes
3-4 scoops of greek yogurt (or sour cream depending on how healthy you want to be)
Shredded cheddar cheese
Salt and pepper to taste
HOW TO MAKE IT
Preheat oven to 400 degrees
Place sweet potatoes on baking sheet and bake for 1 hour or until soft
Once baked, cut sweet potatoes in half length-wise and scoop out the inside to place in a mixing bowl, reserving the skins
Mix the scooped out sweet potato, greek yogurt, handful of cheddar cheese, some green onions and salt/pepper in the bowl
Put the mixture back into the skins of the sweet potatoes
Top it with more cheddar cheese and bake for 15 more minutes
When the cheese has melted, take them out and top with greek yogurt, salt, and green onions
Serve and enjoy your healthy-ish meal
